Being from Wisconsin our New Years dish was to eat pickled herring at midnight. Good thing we liked it! Do it to this day.

Thank you for having all the New Year's traditions and recipes in yesterday's newsletter.  I enjoy having several recipes to serve New Year's Eve and now I can serve recipes from the Southern traditions and German as well.  Thank you for posting them in the December 27, 2017 Recipes



Baked Yellow Squash Recipe

Ingredients
4 to 6 medium yellow squash
3 ounces fresh sausage
1 medium onion, chopped
salt and pepper, to taste
2 slices fresh bread, crumbled
seasoned salt, to taste

Directions
Boil squash whole until just tender; remove and carefully split lengthwise. Using a spoon, scoop out pulp, taking care not to break shells. Set pulp aside. Place squash shells in a baking dish. In skillet over medium high heat, cook sausage with onion. Add salt and pepper to taste; remove from heat. Add squash pulp, bread crumbs, and seasoned salt. Add a little water if the mixture is too dry. Stuff squash shells with the sausage mixture; bake at 375F until browned. Serves 6 to 8.

Sue's Crock Pot Recipes

Sue's Crock Pot Pizza Potatoes Recipe

Ingredients
8 medium potatoes
2 large onions
1 pound smoked sausage
1 teaspoon salt
2 (8 ounce) cans pizza sauce

Directions
Peel potatoes and cut in half, place in crockpot. Cut smoked sausage into pieces and place on top of potatoes. Chop onion. Pour pizza sauce on top, cook in crockpot until potatoes are tender.

Crock Pot Broccoli Chicken Recipe

Ingredients
1 can cream of broccoli soup
boneless breasts of chicken (as many as you need) 1 cup milk
1 package of frozen broccoli, thawed

Directions
Place chicken in the crock. Cover with frozen vegetables, cream of broccoli soup and milk. Salt and pepper to taste. Cook on low all day 8 to 10 hours long or high 4 to 6 hours. Serve over rice.

Crock Pot Cranberry Pork Roast Recipe

Ingredients
3 to 4 pound pork roast
salt and pepper
1 cup cranberries, finely chopped
1/4 cup honey
1 teaspoon grated orange peel
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg

Directions
Sprinkle roast with salt and pepper. Place in crockpot. Combine remaining ingredients. Pour over roast. Cover. Cook on low for 8 to 10 hours. Makes 6 to 8 servings.

Crock Pot Pork Chop Casserole Recipe

Ingredients
5 to 6 pork chops
1 can cream of mushroom soup
2 to 3 onions, sliced
6 to 8 potatoes, peeled and sliced
1/2 pound American cheese, sliced
2 tablespoons oil

Directions
Brown pork chops in oil, cover with onion slices. Add to crock pot. Spoon on mushroom soup and spread over onions. Place potatoes on top to cover onion and mushroom mixture. Salt and pepper to taste. Top with cheese slices, overlapping to cover potatoes. Cook on low for 6 to 8 hours in crockpot.

Apricot Chicken Recipe

Ingredients
8 skinned chicken thighs
1 pound mushrooms, cleaned, halved vertically
1 large onion, cut into large chunks
2 large carrots, sliced
1 celery rib, with leaves, sliced
1 bag dried apricots
1 package dry onion soup mix
apricot nectar to cover

Directions
Place chicken pieces on bottom of crockpot. Sprinkle with the dried soup. Cover chicken with the nectar. Place veggies and dried apricots to taste on top. Cook for 6 to 7 hours on low. Serve with rice.
Note: This is so good. I serve it when company comes over. I am always asked for the recipe.

Crock Pot Apple Bread Pudding Recipe

Ingredients
12 slices white bread, cut into 1/4 inch cubes
4 Granny Smith apples, cored and diced, do not peel
1 1/2 cups unsweetened apple juice
1 cup diet lemon lime soda
1/2 cup Splenda
2 teaspoons apple pie spice

Directions
Spray slow cooker with butter flavored nonstick cooking spray. Combine bread pieces and apples in slow cooker. In small bowl, combine apple juice, soda, sugar substitute and apple pie spice. Drizzle evenly over bread mixture. Mix gently to combine. Cover and cook for 6 hours on low or until done. Remove lid during last hour of cooking. Mix well before serving. Serves 6.

Sue's Crock Pot Pork Chops in Gravy Recipe

Ingredients
1/2 cup all purpose flour
1 1/2 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon garlic powder
6 1 inch thick, lean boneless pork chops
1 10 3/4 ounce can condensed chicken broth
2 tablespoons vegetable oil

Directions
Combine flour, dry mustard, salt and garlic powder in a shallow dish. Dredge chops in flour mixture and set aside. Combine remaining flour mixture with the chicken broth and pour into crockpot. Pour oil into a large skillet and place over medium high heat. Cook the chops in hot oil just until browned on both sides and then place in crockpot. Cook, covered on high for about 3 to 5 hours or until tender. Season with salt and pepper to taste. Serve with hot rice or mashed potatoes. If the gravy becomes too thick just add a little water. If gravy is too thin, add a little flour.

Ham and Bean Stew Recipe

Ingredients
2 cans (16 ounces each) baked beans
2 medium potatoes, peeled and cubed
2 cups cubed fully cooked ham
1 celery rib, chopped
1/2 cup water

Directions
In a slow cooker, combine all ingredients; mix well. Cover and cook on low for 7 hours or until the potatoes are tender. Yield: 6 servings.ENJOY !!

Linda's Fluffy White Rice Recipe

Ingredients
3 c. of white rice (long grain)
3-1/2 c. of water
3 T. cooking oil (butter may be substituted)
1-1/2 T. salt or to taste

Directions
Before cooking, rinse rice several times until water is not so cloudy. Drain. Place rice in pot with 3 1/2 cups of water. Add salt and oil. Boil on high. Allow water to be absorbed until rice is visible at the top; set temperature to low; cover and wait about 10 to 15 minutes. Stir rice very gently with a fork. Eat plain, with beans, meat or mix with pasta.

Linda's Sweet Pineapple Rice Recipe

Ingredients
1 c uncooked rice
1 medium can pineapple chunks, undrained
1-1/2 c sugar
3/4 stick margarine

Directions
Cook rice according to package directions. While rice is cooking, mix pineapple, sugar and margarine in medium saucepan and bring to boil. Boil for 10 minutes. Mix with rice and pour into buttered casserole dish. Bake at 400 degrees for 45 minutes. Serve hot.

Winter Beef Stew Recipe

Ingredients
2 lb. of all lean beef tips
5 med. size potatoes, peeled and cut into 1-inch squares
2 carrot sticks cleand and cut into small slices
2 large onions, diced small
1 (28 oz.) can of tomatoes
1 T. of margarine
salt and pepper to taste

Directions
First use a deep skillet, with a small amount of cooking oil in the bottom, salt and pepper the beef tips, roll them in flour, drop them into the grease and lightly brown them. Take them out and put them into the stew pot. Leaving the grease out, cover and brown the beef tips in water, let boil for 30 minutes. Add small carrot pieces, potatoes, onions, tomatoes and margarine and salt and pepper to taste. Let simmer for an hour or until done.
