Spice and Carrot Bran Muffins Recipe

Ingredients
2 cups all bran cereal
1 1/4 cups milk
1/2 cup cooking oil
2 beaten eggs
1 1/2 cups shredded carrot
1/2 cup coconut flakes or shredded
1/2 cup raisins
1 1/4 cup all purpose flour
1/2 cup packed brown sugar
1/4 cup granulated sugar
2 tsp baling powder
1 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp plain salt

Directions
Preheat oven375 degrees.

In a large mixing bowl combine cereal, milk, oil and eggs. Let stand 10 minutes. Next stir in carrot,raisins and coconut. mix well.
In another bowl combine flour, sugars, baking powder, baking soda, cinnamon and salt.
Add cereal mixture to flour mixture. Stir just til combined. Grease muffin tin or line with paper bake cups, fill each 2/3 full. Bake for 15-20 minutes or until a toothpick inserted near center comes out clean. Serve warm !!! yield:18 muffins ENJOY !!!

Pumpkin Butter Recipe

Ingredients
1-3/4 cups solid pack pumpkin puree
1 cup applesauce
3/4 cup apple juice
1/2 cup brown sugar
1 tsp pumpkin pie spice

Directions
In a saucepan over medium heat, mix all ingredients together well. Bring to a boil. Reduce heat,and simmer about 1 1/2 hours. Pour into sterile containers and chill in refrigerator until serving. It goes great with most anything! ENJOY !!

Artichoke Salsa Recipe

1 jar artichoke hearts(NOT marinated), drain and chop
1/4 cup chopped black olives
2 Tbsp chopped red (or sweet onion) onion
3 medium tomatoes chopped
3 cloves garlic minced
2 Tbsp fresh chopped basil OR 1 1/2 tsp dried basil
salt and pepper to taste
Chips for dipping.

Directions
Mix all together and let sit a few hours or overnight to blend flavors, in refrigerator. Take out of refrigerator about 1 hour before serving to come to room temperature.
serves 5 ENJOY !!

Turkey or Chicken Surprise Recipe

great on waffles, noodles,rice or biscuits
4 Tbsp shortening
2 Tbsp grated or fine minced onion

1 clove garlic minced
4 Tbsp flour
2 cups turkey/chicken broth
1 Tbsp soy sauce
3 cups cooked chopped turkey/chicken



Melt shortening in saucepan, add garlic and onion saute til tender. Stir in flour, cook til bubbly, stir constantly. Add broth, soy sauce, meat and any other seasonings wanted. Cook til thickened and thoroughly heated through, about 20 minutes on medium heat. Serve!
makes 5 servings ENJOY !!

Cherry Canberry Salad Recipe

Ingredients
1 lg box of cherry jello
1 cup BOILING water
1 can jellied cranberry sauce
1 cup sour cream
1 cup chopped nuts (your choice nuts)

Directions
Mix jello and water well. Add cranberry sauce, stir til almost completely melted. Refrigerate til partially firm. Gently fold in sour cream and nuts. Pour into a mold or serving dish, Refrigerate til serving time. Sooooo Good !

Serves 8 ENJOY !!! J
